…este cea cu altuat facut din faina alba si faina grifica

Nu stiu daca stiti cu totii, daca nu va spun eu: secretul din spatele celui mai bun aluat de pizza este faina grifica. Ce este aceasta faina si ce rol are? Ei bine ea este o faina cu granulatie mare, (asemanatoare cu grisul, dar mai fina) care contine mai putin gluten si, automat absoarbe mai putin apa. Este faina care se foloseste la fabricarea pastelor – de aceea pastele din faina grifica/durum nu sunt gumoase dupa fierbere. Exact ca la paste, si aluatul de pizza facut cu faina grifica este un aluat mai putin elastic si mai fraged. Din pacate la noi nu este o faina foarte cautata si se gaseste destul de greu.

Norocoasa cum ma stiti, primesc lunar de la prietenii mei de la Gyermely faina cat sa fac muuulte paini, paste si aluaturi de pizza. Bine, “norocoasa” pentru ca i-am ajutat cu traducerea unor retete din limba maghiara. Stiti voi, oamenii care muncesc sunt oameni norocosi. :))

Si, pastrand aceeasi idee, cu mine cea norocoasa: cand am mers la Brusturoasa pentru atelierul de prajiturit – Indulceste-le copilaria #2, ai mei ne-au aratat mult asteptata supriza: noul cuptoro-grataro-plita pe care l-au facut la casa de la tara. E o minune, nu alta… Doamne ce fain e la casa!  Si, casa fie trioul norocului meu, spun ca am fost mega norocoasa pentru ca am avut ocazia “sa fac safteaua” cuptoruluiavandu-i alaturi pe Ruxandra si Andrei de la Visual Story Team, aka cei mai faini si priceputi fotografi, care au facut pozele si filmuletul pentru cea mai buna reteta de pizza. Va multumesc, dragilor! Cred ca si cititorii mei va multumesc.

 Cred ca nu mai e nevoie sa spun prea multe, imaginile de mai jos sunt graitoare. Ah, doar ca ai mei, din nou, s-au dovedit cei mai faini parinti: nu-i paleta, ba da e paleta (vezi ultima poza).

 

Cea mai buna reteta de pizza

Ingrediente
Pentru aluat - 4 pizza medii
  1. 400 g faina 450 sau 550 (eu am folosit faina Gyermely 550 )
  2. 100 g faina grifica (Gyermely)
  3. 300 ml apa calduta
  4. 3 linguri ulei de masline
  5. 1 cub de drojdie proaspata (cat o nuca)
  6. 1 lingura rasa de zahar
  7. 1 lingurita de sare
  8. 1 lingurita de oregano si 1 lingurita de busuioc (optional)
Pentru sos
  1. 1 conserva rosii tocate sau bucati (la tara, unde am facut eu pizza nu am gasit decat bulion – va recomand sa NU folositi bulion)
  2. 1 catel de usturoi zdrobit
  3. Cateva fire busuioc proaspat sau 1 lingurita busuioc uscat
  4. 3 linguri ulei de masline
Pentru toping
  1. 50 g mozarella feliata (obligatoriu)
  2. Orice altceva doriti (mezeluri, branzeturi, legume)
Cum procedam
Sosul
  1. Fierbem toate ingredientele 5-6 minute la foc mic, apoi lasam sosul sa se raceasca la temeperatura ambientala
Aluatul
  1. Intr-un bol mic/castron punem drojdia zdrobita usor, zaharul, 2 linguri de faina si 100 ml apa calduta - amestecam compozitia pana se formeaza o pasta moale si dam la loc calduros pana cand pe deasupra se formeaza o spuma (asta inseamna ca drojdia este activa)
  2. Intr-un bol mare/lighean punem faina, facem o gaura in mijloc si acolo adaugam restul ingredientelor, inclusiv drojdia dizolvata (si activata)
  3. Framanatam (cu mana sau cu un mixer) pana obtinem un aluat moale si foarte putin lipicios (o parte din framanatare in bol, o parte pe o suprafata pudrata usor cu faina). Daca framantam cu mana, o facem 12 minute, daca avem un mixer tip Kitchen Aid, 5 minute sunt suficiente
  4. Ungem bolul cu ulei de masline si punem inapoi aluatul
  5. Acoperim bolul cu o folie de plastic si il punem intr-un loc calduros la dospit pana isi dubleaza volumul
  6. Cand aluatul este crescut, il scoatem pe o suprafata pudrata cu faina si il impartim in 4 parti egale (daca vreti pizza mai mici, puteti sa il impartiti in 6)
  7. Luam fiecare bucata de aluat si il formam intr-o bila intinzand marginile aluatului si bagandu-le sub el, astfel incat sa se formeze o suprafata fina, usor tensionata
  8. Procedati la fel cu toate bucatile de aluat, abia apoi apucati-va de facut blatul efectiv (cat timp intindeti blaturile, celelalte vor mai dospi putin, si, automat vor deveni mai pufoase)
  9. Intindeti un aluat cat doriti de subtire (daca il intindeti cu mainile iese mai pufos, daca o faceti cu sucitorul va iesi mai crocant; recoamndarea mea e sa o faceti cu mainile)
  10. * Daca faceti pizza intr-un cuptor cu lemne, adica cea mai buna reteta de pizza (ca cea din filmare) asteptati sa se incinga bine-bine cuptorul, ungeti blatul cu sos, puneti mozarella, apoi topingurile preferate si bagati pizza la cuptor pentru 3-4 minute sau pana cand este coapta (verificati ridicand usor cu paleta blatul)
  11. * Daca o faceti la cuptorul de acasa, ungeti blatul cu sos puneti-l intr-o tava in care ati pus hartie de copt sau, daca aveti, piatra si dati la cuptorul incins la maxim pentru cateva minute (pana cand se usuca sosul). Scoatei blatul adaugati mozzarela si restul topingurilor, dupa preferinte, si mai dati la cuptor pana cand se rumeneste cat doriti.

  1. Ca si sortimente, preferatele noastre sunt 1 - Picanta: salam picant + ardei iute, 2 - Quatro Formagi: camembert + gorgonzolla + parmezan, 3 - Ansoa alioli: Ansoa + usturoi.
  2. Nota 2: In film am facut pizza din 1,5 kg faina.

  70. Buna Mihaela, se pare ca ai avut un combo perfect pentru a iesi o pizza buna. As vrea si eu sa incerc , doar ca nu am asemenea cuptor, am doar pe cel clasic pe gaz. Altfel, cred ca ma incadrez la restul utilitatilor, te anunt ce iese 🙂
